Crazy Good Candied Bacon

We always have bacon in our fridge or freezer, so when I was inspired to try this, I couldn't wait to get started! So glad I did! Or, at least I think I am, it could be a problem because its hard to put it down once you get started tasting this amazing little snack.

You can use this in so many ways... You can use it as an appetizer like I did with cheese, apples, etc. Or, you can put it in salads, sandwiches, baked goods to make a sweet salty nummy kind of muffin or cookie. Or, just put it to your mouth and munch, munch, munch! Our bacon is perfect for candying because its nice and thick! It doesnt work quite as well with a thin cut bacon.

All you need is...

1 lb. of thick cut bacon (JR Meat Co.)

3/4 c. packed brown sugar

1 tsp ground mustard

1 tsp cajun seasoning

1 tsp crushed red pepper

(Vary any of these ingredients according to taste or what you have on hand, the only one I would stick with is the brown sugar. You can add maple syrup for sweetness or flavor also)

Mix all ingredients in plastic bag. Place 2 pieces of bacon in the bag at a time and shake to coat. If you have a little one in the house this part can be fun for them! Continue with all your bacon until all is coated and placed on a aluminum foil lined cookie sheet. Sprinkle remaining brown sugar mixture on top of each piece of bacon. Bake at 325* for 30-45 minutes or browned and candied. Place on parchment paper to cool.
